Schupfnudeln with sauerkraut and bacon on apple sauce

Ingredients for 4 servings:

  • 1 kg potato noodles
  • 1 can sauerkraut
  • 100 g smoked bacon, preferably Black Forest
  • 5 juniper berries
  • salt and pepper
  • 1 jar applesauce or apple compote
  • Fat for frying

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Southern German poor man’s food

Fry the dumplings in a large pan in hot fat until lightly golden brown. Add the bacon and cook, turning frequently. Squeeze the sauerkraut to release any excess liquid, then pull it apart and spread it evenly in the pan. Crush the juniper berries a little, if desired, and add them. Now sizzle everything together, turning frequently, until golden brown. Serve with applesauce and beer.
