Ingredients for 2 servings:
- 2 sausages (chicken sausages)
- 1 m.-large zucchini
- 6 small mushrooms
- 2 spring onions
- 1 m.-sized carrot(s)
- 1 m.-large celery
- 2 tomatoes, fresh
- 250 ml vegetable stock
- 1 small can of tomatoes (400 ml), chopped
- 1 tbsp tomato paste
- e.g. curry powder
- some salt
- n. B. Pfeffer
- possibly turmeric, garam masala or other spices as required
- 2 tbsp vegetable cream for frying
Instructions

fast, healthy and low in fat
First, wash, peel, or trim the vegetables, and slice them. Cut the chicken sausages into pieces and fry them in 1 tablespoon of hot vegetable cream, then remove them from the pan and set aside. Sauté the zucchini and mushrooms in another tablespoon of vegetable cream (about 2 to 3 minutes). Season with curry powder, salt, and pepper and toss briefly. Now add the spring onions, celery, and carrot and fry for another 2 minutes. Deglaze with vegetable stock. Add the canned tomatoes and tomato paste and simmer for about 5 minutes. Now add the fresh diced tomatoes and season again if desired (curry powder, possibly turmeric, garam masala – depending on your taste). Return the sausage pieces to the pan and let them simmer in the sauce mixture for a while. Stir everything together again briefly and serve. This goes well with rice, naan bread, or rye bread or rolls.
