Raisin muffins with nuts and chocolate

Ingredients for 1 servings:

  • 260 g flour
  • 150 g sugar
  • 1 packet of baking powder
  • 100 ml oil, tasteless (e.g. sunflower oil)
  • 500 g natural yogurt (0.1% fat)
  • 2 m.-sized eggs
  • 200 g chocolate shavings (dark)
  • 200 g hazelnuts or walnuts, ground
  • 250 g raisins or rum raisins

Working time approx. 25 minutes; Total time approx. 25 minutes

Whisk the eggs in a bowl until foamy. Add the sugar and whisk. Add the oil and natural yogurt and whisk. Mix the flour with the baking powder, add to the flour, and whisk to combine. Now add the nuts and then the chocolate shavings and mix. Stir in the raisins with a spoon and fold in. Preheat the oven to 180°C (top/bottom heat: 160°C). Divide the batter and place the first half in a prepared muffin tin. Place in the hot oven and bake for about 30 minutes, until the muffins are nicely browned. Let them rest in the tin for about 10 minutes, then let them cool completely on a wire rack. Repeat the process for the second half of the batter.
