Ingredients for 6 servings:
- 400 g flour
- 6 eggs
- 1 pinch of salt
- 80 ml water
- 4 pairs of bratwurst, coarse

Make a spaetzle dough from the flour, eggs, salt, and water. Cut the sausages lengthwise and remove the casings. Add the sausage meat to the spaetzle dough and mix well, preferably with a food processor, for about 5 minutes. Let the spaetzle dough rest for 15 minutes before scraping it into a pot filled with boiling water. As soon as the spaetzle float to the top, remove them and refresh them in ice-cold water. You can now eat these spaetzle either with a rich beef broth or sautéed with a crisp salad.
