Bratwurst with Gourmet Red Cabbage, Turnip Mashed Potatoes and Roasted Onions

Ingredients
 

Fried sausage:

  • 2 Fresh, coarse sausages (150 g each)
  • 1 tbsp Clarified butter

Gourmet red cabbage: For 12 people *) See note

  • 1 Red cabbage 1.75 kg (cleaned and cut 1500 g)
  • 2 tsp Salt
  • 2 tsp Sugar
  • 4 tbsp Red wine vinegar
  • 4 Onions approx. 200 g
  • 4 Apples approx. 500 g
  • 1 tbsp Butter
  • 1 tbsp Goose fat
  • 400 ml Red wine
  • 600 ml Water
  • 2 tbsp Food starch
  • 1 tbsp Goose fat
  • 1 tsp Salt
  • 2 tsp Sugar
  • 4 tbsp Red wine vinegar
  • 4 tbsp Wild cranberries
  • 2 tsp Cinammon
  • 4 Mandarins

Turnip mashed potatoes:

  • 0,5 Small turnip approx. 400g / peeled .300 g
  • 300 g Potatoes
  • 1 tsp Salt
  • 4 tbsp Cooking cream
  • 1 tbsp Butter
  • 1 big pinch of salt
  • 1 big pinch of nutmeg
  • 2 1 - 2 cloves of garlic
  • 1 piece Ginger approx. 10 g
  • 0,5 Red chilli pepper
  • 0,25 Bunch of parsley plucked

Roasted onions:

  • 2 Onions approx. 100 g
  • 0,5 tsp Sweet paprika
  • 0,5 tsp Mild curry powder
  • 0,5 tbsp Flour
  • Fry the fat from the sausages

Garnish / Serve:

  • 2 Parsley stalks
  • Possibly mustard

Instructions
 

Fried sausage:

  • Pinch the sausages and fry them slowly until golden brown on all sides in clarified butter (1 tbsp).

Gourmet red cabbage: (for 12 people / here 2 servings from yesterday approx. 250 g)

  • Quarter the red cabbage, cut out the stalk generously, remove the outer leaves and cut all of them into fine, not too long strips. (or planing if necessary). Mix / knead with salt (2 teaspoons), sugar (2 teaspoons) and red wine vinegar (4 teaspoons). Peel the apples, remove the casing, dice and mix with the red cabbage. Peel and dice the onions and fry them in butter fat (1 tbsp) and goose lard (1 tbsp). Add the cut red cabbage with apples, briefly fry / stir-fry and deglaze / pour with red wine (400 ml) and water (600 ml). Let everything simmer / cook for about 1 hour. Possibly add water. Warning: can burn quickly! Mix the cornstarch (2 tbsp) with cold water and mix with the red cabbage. The red cabbage should become shiny. Season with salt (1 teaspoon), sugar (2 teaspoons), goose fat (1 teaspoon), red wine, vinegar (4 teaspoons) and cinnamon (2 teaspoons). Peel the mandarins and cut the wedges into thirds. Finally fold in the wild cranberries (4 tbsp) and pieces of tangerine.

Turnip mashed potatoes: (for 4 people)

  • Peel the turnip and potatoes, wash, dice, cook in salted water for about 20 minutes, drain through a kitchen sieve, add the cooking cream (4 tbsp), butter (1 tbsp), salt (1 pinch), nutmeg (1 pinch), with Stomp through the potato masher and fold in the chopped clove of garlic, diced ginger, diced chili peppers and plucked parsley.

Roasted onions:

  • Peel the onion, quarter it, cut into wedges, toss / mix in flour (½ teaspoon) and paprika (½ teaspoon) and mild curry powder (½ teaspoon) and fry / stir-fry in the frying fat of the sausage pan.
