Ingredients for 2 servings:
- ½ m.-sized onion(s)
- 90 g cooked ham
- 3 bread dumplings from the day before
- 1 tbsp sunflower oil
- 1 tbsp butter
- ½ tsp rosemary
- n. B. Sea salt and pepper, white, from the mill
- 4 m.-sized eggs
- 4 tbsp Gouda, grated
- 1 sprig of parsley, coarsely chopped
- 12 g Parmesan
Instructions
Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes
Peel the onion, halve it, and slice it into thin strips. Cut the dumplings into 1 cm thick slices, then quarter them. Cut the cooked ham into strips. Roughly chop the parsley. Heat the oil in a pan, melt the butter, and fry the onion. Add the cooked ham and fry briefly. Then add the dumplings and fry, turning frequently. Add the rosemary to the dumplings and season with salt and pepper. Whisk the eggs with the Gouda cheese, add a little salt. Pour over the dumplings and let everything set over low heat for about 2-3 minutes, turning occasionally. Sprinkle the Gröstl with the parsley and grate the Parmesan cheese over it. Arrange and serve.
