Ingredients for 4 servings:

  • 300 g roll(s), 2 days old
  • 3 eggs
  • ¼ liter milk, lukewarm
  • Nutmeg, freshly grated
  • 1 tbsp parsley, freshly chopped
  • ½ onion(s), diced, sautéed in butter until colorless
  • Salt and pepper from the mill

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Bavarian

Cut the rolls into thin slices. Add the eggs to the milk and whisk with a hand blender or whisk. Season with nutmeg. Add the egg mixture to the rolls. Stir in the diced onion and parsley. Season with salt and pepper, and knead with your hands until a firm dough forms. Let the mixture rest for 20 minutes. Using moistened hands, roll the dumpling mixture into smooth dumplings and let them rest in salted water just below boiling point for 15 to 20 minutes, until they rise to the top.
