Ingredients for 2 servings:
- 4 rolls from the previous day
- 400 ml milk
- 3 eggs
- 50 g sugar
- 50 g butter, clarified butter or margarine for frying
- 1 jar plum(s), peach(s) or apple sauce
Instructions
Working time approx. 25 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 55 minutes
Cut the rolls into cubes and place in a bowl. Beat the eggs with the milk and pour over the rolls. Let the mixture rest for a while, then stir thoroughly after 10 minutes and let it rest again until the rolls are soft. Heat a pan with butter and fry the Semmelschmarren until browned, turning frequently. Finally, sprinkle with sugar (if desired) and let the Schmarren caramelize slightly. Serve the Schmarren on flat plates and serve with plums or other compote. This is a “leftover recipe” from my mom, for which I sometimes buy extra Semmeln (rolls) because I loved them so much as a child.
