Bread & Rolls: Pretzel
The perfect bread & rolls: pretzel recipe with a picture and simple step-by-step instructions.
- 1 kg Wheat flour type 405
- 1 dice Yeast
- 500 ml Lukewarm milk
- 1 Pc. Butter
- 100 g Sugar
- 1 tbsp Salt
- Egg yolks for brushing
- Milk for brushing
- Crumble and stir the yeast into the warm milk, add the flour, butter (room temperature), sugar, eggs and salt and knead everything well in the KitchenAid, then cover the dough bowl and leave in a warm place for an hour let go.
- Shape three quarters of the dough into a long roll and form a pretzel and place on a baking sheet lined with baking paper. Shape the rest of the dough into three parts and each into a long roll and use it to braid, brush the upper part of the pretzel with warm water and place the braid on top and press firmly, working the transitions a little.
- Let the whole thing rise again for a good 30 minutes, preheat the oven during this time, then mix the milk with the egg yolk and brush the whole pretzel with it and bake at 170 degrees for 30 to 35 minutes.
- 4 …. then break off a piece …. brush with butter … put it in your mouth … and enjoy ;-)))
- 5 ….. and such pretzels can be baked “Frau” in summer too.
