Bread soup with mozzarella

Ingredients for 4 servings:

  • 300 g white or brown bread
  • 300g mozzarella
  • 1 bunch of parsley
  • 1 bell pepper(s), red or yellow, diced
  • 2 cloves garlic
  • 1 liter vegetable broth
  • 1 pinch of nutmeg
  • salt and pepper

Working time approx. 40 minutes; Total time approx. 40 minutes

Cut the bread and mozzarella into thin slices and layer them in an ovenproof baking dish (bread-cheese-bread-cheese-bread-cheese). Sprinkle the cheese with nutmeg, salt, and pepper after each layer of mozzarella. Sprinkle some of the parsley, diced bell pepper, and chopped garlic between each layer. Heat the vegetable broth and pour it over the mixture in the baking dish. Bake at 180°C for about 20 minutes, until the surface is lightly browned (the last layer should, of course, be mozzarella). Sprinkle with parsley and serve as an appetizer.
