Ingredients
 

  • 250 g Spelt flour type 630
  • 250 g Wholemeal spelt flour
  • 350 ml Buttermilk
  • 8 g Salt
  • 4 g Baking soda
  • 50 g Sunflower seeds

Instructions
 

  • Mix both types of flour with salt and baking soda. Now slowly add the buttermilk with the dough hook and work the whole thing together with the sunflower seeds into a heavy kneadable dough.
  • Preheat the tube to 200 ° C circulating air and slide a tray into the bottom rail. Sprinkle some spelled flour on a second baking tray.
  • Shape the dough into a loaf, cut the top into a diamond shape and dust with a little flour. Bake for about 40 minutes, pouring cold water onto the lower baking sheet right at the beginning and then again every ten minutes. This creates water vapor, which makes the bread nice and crispy.
  • Place the fresh bread spicy or sweet as you like.
