Breaded Cauliflower with Cheese Sauce

Cheese sauce

  • 2 tbsp Flour
  • 1 Egg
  • 100 g Wake-Up flour
  • Salt and pepper
  • 200 ml Cauliflower water
  • 50 ml Cream
  • 1 Egg yolk
  • 150 g Cream cheese
  • 50 g Grated Gouda
  • Salt and pepper
  • Freshly grated nutmeg


  • Clean the cauliflower, cut into florets and wash. A saucepan with water, salt and bring to the boil, then add the cauliflower and cook until al dente. Pour off the flowers and collect the water.
  • Drain well, then turn in the flour, season with salt and pepper, then in the egg and finally in the baking flour.
  • Bake in a pan with hot fat.
  • For the sauce, dissolve the processed cheese in the cauliflower water, add the grated cheese, briefly bring to the boil, season with salt and pepper, then whisk the yolk with cream and add to the sauce, do not boil anymore, season again if necessary.
