Breaded cheese and pepper pollock fillets

Ingredients for 2 servings:

  • 2 large pollock fillets, halved in the middle
  • 4 tbsp emmer flour or einkorn flour
  • 1 egg(s)
  • 12 tbsp breadcrumbs (wholemeal breadcrumbs)
  • 2 tsp sweet paprika powder
  • 3 tbsp cheese, grated
  • salt and pepper
  • Oil or butter for frying

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Fill three plates or a breading set. Fill the first plate with flour, add the egg to the second and beat it with a fork. Mix the whole-wheat breadcrumbs, paprika, and cheese into the last plate and mix well. Coat the thawed pollock fillets in the flour, then in the egg, and finally in the breadcrumb mixture. Heat oil in a pan and fry the fillets on both sides. This will take 10-15 minutes, depending on the size and heat.
