Mother’s recipe
For the pancakes, whisk the eggs in a bowl, then add the flour and a pinch of salt, gradually whisking in the milk. Let it rest for about 10 minutes, then cook the pancakes. You should be able to make at least 6 pancakes from the specified amount. For the ham filling, cut the ham into small cubes. Heat the butter in a pan or small saucepan. Fry the ham for a few minutes. Let it cool slightly, then mix it with the egg. Spread about 1 tablespoon of ham on a pancake, roll the pancake up, and secure it with a toothpick. For the breading, beat an egg in a deep dish, dip the filled pancake in it, and then coat it in breadcrumbs. Heat sunflower oil in a pan and fry the pancakes until golden brown on each side. Almost everyone has a favorite dish from their mother; this is mine. The pancakes can also be made using any other recipe. I calculate 3 filled pancakes per serving. If you’re a little hungrier, make 4 pieces.
