  • 1 large radish(s)
  • 2 eggs
  • Breadcrumbs
  • salt and pepper
  • lemon juice
  • Oil for frying

vegetarian/meat-free alternative to Wiener Schnitzel or Chicken Nuggets

This recipe, using 1 radish, makes about 16 nuggets. First, peel the radish and remove the head and the bottom part. Then, cut the radish into approximately 1 cm thick slices, drizzle with lemon juice, salt, and pepper. Now, prepare the breading: Crack the eggs into a bowl/deep plate and whisk. Add the breadcrumbs to another bowl. Then, coat the radish nuggets twice (!) in breadcrumbs to prevent the radish from burning, and fry in a pan until crispy and golden brown. Serve warm (e.g., with wild cranberries and potatoes). Variation: Use kohlrabi instead of radish.
