Melon Tiramisu

Ingredients for 8 servings:

  • 1,000 g mascarpone
  • 1 melon(s) (honeysuckle or Galia melon)
  • 300 g ladyfingers
  • e.g. vodka (melon vodka)
  • n. B. sugar, brown
  • 100 g powdered sugar
  • 6 sheets of gelatin
  • some water, cold

Instructions

Working time approx. 30 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 30 minutes

Fruit – mascarpone dessert without eggs

Soak the gelatin leaves in cold water. Deseed and peel the melon. Purée a quarter of it and mix it with the mascarpone and powdered sugar. Fragrance it with the melon vodka. Dissolve the gelatin in a water bath and add it to the mascarpone cream. Cut the remaining melon into thin slices or small cubes, as desired. Set aside a handful for later garnishing. Crumble the sponge fingers and cover the bottom of a baking dish with half of them. Arrange some of the melon pieces on top and then cover with half of the mascarpone cream. Fill with another layer in the same order. Place the dish in the refrigerator and let it set for at least 3 hours. Before serving, sprinkle lightly with brown sugar and garnish with the remaining melon slices or pieces.
