Breaded turkey and spent grain schnitzel

Ingredients for 3 servings:

  • 3 turkey schnitzels
  • 5 cloves garlic
  • salt and pepper
  • 3 tbsp oil
  • 4 tbsp flour
  • 2 cup(s) spent grains, 250 ml
  • 1 cup whole wheat breadcrumbs, 250 ml
  • 2 eggs
  • some milk
  • 1 tbsp paprika powder
  • Fat

Instructions

Working time approx. 20 minutes; Rest time approx. 6 hours; Cooking/baking time approx. 20 minutes; Total time approx. 6 hours 40 minutes

Crush the garlic and mix it with the oil, salt, and pepper. Rub it all over the turkey cutlets and marinate for at least 5-6 hours. Dust with flour. Whisk the eggs with milk, paprika, salt, and pepper. Coat the cutlets well in the flour. Mix the spent grains and whole-wheat breadcrumbs. Coat the cutlets well in the flour. The coating should be nice and thick. Fry in a pan with plenty of fat over low heat for about 10 minutes on each side. The time may vary depending on the size of the cutlets and the heat.
