Ingredients for 1 servings:

  • 300 g spelt flour type 630
  • 1 egg(s)
  • 1 packet of baking powder
  • 75 ml oil
  • 4 tbsp liquid honey
  • 150 g low-fat curd cheese
  • 1 egg yolk for brushing

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Quickly knead all ingredients into a smooth dough. Transfer the dough to a covered bowl and leave overnight. The next morning, preheat the oven to 180°C (top/bottom heat) and line a baking sheet with baking paper. Roll out the dough on a floured surface into a large circle and cut into 12 equal-sized “pizza” pieces. Roll each piece from the outside into a croissant. If you like, you can also fill the croissants with Nutella or jam, which is also delicious. Brush the croissants with egg yolk and bake in the preheated oven for 15-20 minutes. You can also bake the croissants right away, eliminating the need to refrigerate the dough overnight. This will speed things up a bit in the morning.
