Breakfast: Healthy Waffles

The perfect breakfast: healthy waffles recipe with a picture and simple step-by-step instructions.

  • 150 g Spelled flour either type 603 or whole grain
  • 40 g Teff flour or flakes
  • 30 g Sweet lupine flour
  • 2 tsp Tartar baking powder
  • 1 Msp Cinnamon
  • 1 pinch Salt
  • 4 tbsp Neutral oil for baking
  • 100 g Pitted dates, Deglet Nour or Medjoul
  • 25 g Natural yogurt or Greek yogurt
  • 1 tbsp Nut butter
  • 275 ml Plant milk or milk
  • 3 Pc. Eggs
  1. First, finely puree the dates with oil, yoghurt, nut butter and milk. Stir in the eggs and then add all the remaining ingredients. Process into a smooth dough.
  2. Bake the dough in portions with the waffle iron (grease beforehand if necessary). The waffles taste warm and cold. Store leftovers in the refrigerator and simply bake them briefly in the toaster, then they taste like fresh.

Tips:

  1. If the dates are not very soft, it is helpful to soak them in water at least an hour beforehand. 100 g dates make the waffles sufficiently sweet if you like to eat them straight. If you also dip them in honey or maple syrup anyway, you can also reduce them to 80 g dates. If you don’t have dates on hand, you can also use date sweetener.
