Pizza with Salami, Peppers and Peppers Ala Setangi Beach
The perfect pizza with salami, peppers and peppers ala setangi beach recipe with a picture and simple step-by-step instructions.
For the dough:
- 180 g Wheat flour, type 1050
- 90 g Water
- 2 Pinches Salt
- 2 tsp Oregano
- 10 g Dry yeast
Optional:
- 1 tbsp Extra virgin olive oil
For the tomato pesto:
- 3 medium-sized Garlic cloves
- 5 tbsp Tomato juice
- 2 tbsp Tomato paste
- 6 tbsp Extra virgin olive oil
- 3 tbsp Walnut kernels, crushed
- 3 tbsp Parmesan
- 0,5 tsp Salt
- 1 tsp Black pepper, fresh from the mill
For covering:
- 200 g Mozzarella, grated
- 50 g Mountain cheese or Parmesan, grated
- 8 Discs Salami
- 1 medium-sized Tomato
- 1 Hot peppers, green, long, medium hot
- 10 g Sweet peppers, red
- 10 g Sweet peppers, green
- 4 Olives, pitted, black
- 3 tbsp Extra virgin olive oil
Note:
- The recipe is for a 32-cup pizza.
- Make a firm dough the day before using the ingredients for the dough and let it rise for 5 hours in a warm place. Knead vigorously, sprinkle with flour, wrap in plastic and let ripen in the refrigerator for 24 hours.
- Prepare the ingredients for the topping the next day. Wash the tomatoes, peel, quarter lengthways, core, cut in half crosswise and keep ready. Cut the peppers crosswise into thin rings and remove the stones. Cut the peppers lengthways into thin strips and halve the olives lengthways.
- Squeeze the garlic cloves for the pesto into a blender cup and add the remaining ingredients. Puree finely at the highest speed in 90 seconds.
- Knead the dough again, roll out sufficiently large on a floured work surface and place in a greased, flat 32-inch pizza pan. Roll up the edge a little and let rise in a warm place for 1 hour. Preheat the oven to 250 degrees top heat. Perforate the pizza base with a fork.
- Pre-bake the dough at 250 degrees top heat on the middle rack until it starts to brown. Take out of the oven. Switch the oven to bottom and top heat. Spread the pesto on the base and coat the edge thinly with it.
- Mix the two types of cheese and sprinkle on the bottom. Cover with the remaining ingredients for the topping and then drizzle with the olive oil. Put in the oven and bake until the cheese has melted.
- Take out of the oven, place on a suitable wooden board, cut into 8 parts, serve immediately and enjoy.
