Breakfast waffles with yeast

Ingredients for 4 servings:

  • 250 g flour (whole wheat flour)
  • 1 pinch of salt
  • 1 lemon(s), zest
  • ½ sachet of dry yeast
  • 350 ml soy cream
  • 1 tbsp cane sugar
  • 50 g margarine

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 10 minutes

Combine flour, salt, lemon zest, and yeast. Mix the slightly warmed soy cream with the margarine and sugar. Whisk the liquid into the flour mixture until bubbles form, let it rise for 1 hour, and stir again. Pour 2 tablespoons of batter into the preheated waffle iron and bake for about 2 to 3 minutes. If you stick to the sugar amount mentioned above, tomato and cucumber also taste good as toppings, but jam or similar would also work, of course.
