great little meal

Pound the schnitzels and season with salt, pepper, and paprika. Then coat them in flour, dip them in the beaten egg, and then coat them in breadcrumbs. Fry them gently on both sides in plenty of clarified butter until golden brown. Keep the schnitzels warm briefly in the oven at around 100°C. In the meantime, fry a fried egg per person. To serve, toast two slices of bread per person and spread with a little herb butter while still hot. Place a schnitzel on top, followed by a fried egg, and sprinkle with salt, pepper, and paprika. Serve with a mixed salad. A great little meal that we often have in the summer.
