Ingredients for 1 servings:

  • 500 g wheat flour type 550
  • 220 ml whole milk, fresh
  • 42 g yeast, fresh
  • 20 g sugar
  • 15 g honey
  • 8 g salt
  • 80 g butter, melted
  • 1 egg(s)
  • 10 g olive oil
  • 1 egg(s)
  • 3 tbsp milk
  • 2 tbsp water
  • e.g. sesame

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 2 hours 5 minutes

Heat the milk to approximately 30-35°C, add the yeast and sugar, and let it rest for 10 minutes. In the meantime, combine the other ingredients for the dough in a bowl. Now briefly stir the milk, yeast, and sugar mixture, add it, and knead everything well for 10 minutes. After 5 minutes, feel if the dough is no longer sticky. If it is, add 1 tablespoon of flour and check again after 30 seconds, adding flour until the dough is no longer sticky. Cover and let the dough rise for 45 minutes. Weigh the dough and divide it into 10 pieces. Each piece weighs approximately 90g-100g. Shape it into small balls, place them on a baking tray, and flatten them slightly. Cover and let rise for another 45 minutes. Now whisk together the egg, milk, and water and brush the buns with it. Sprinkle with sesame seeds if desired. Preheat the oven to 200°C (top/bottom heat). Bake the buns for approximately 15-20 minutes.
