Broadleaf plantain – side dish

Ingredients for 1 servings:

  • 100 g flowers (still green broadleaf plantain inflorescences)
  • 1 tsp clarified butter or butter
  • salt and pepper
  • e.g. flour and/or breadcrumbs

from the inflorescence of the not yet flowering broadleaf plantain

Wash the broadleaf plantain flowers collected from the meadow; there are about 10-15 of them, and dry them on kitchen paper. Heat the clarified butter in a pan and add the washed broadleaf plantain flowers to the pan. Season with salt and pepper and sauté in the clarified butter until soft. I also lightly floured the side dish in the pan and sprinkled breadcrumbs over it. You can then serve this side dish with potatoes and a lamb chop or any other quickly pan-fried meat dish. Serve the side dish with either hollandaise sauce or brown butter. Prepare to be surprised: it tastes good and is healthy too.
