Ingredients for 4 servings:

  • 1 kg turnip greens
  • 25 g butter or margarine
  • Salt
  • 30 g butter
  • 20 g flour
  • 250 ml milk
  • Salt and pepper, freshly ground white
  • Nutmeg, freshly grated

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Strip the leaves from the stems. Wash the stems thoroughly and drain. Cut into pieces about 4 to 5 cm long. Heat the fat in a saucepan and add the turnip greens. Sauté with a little salt in a covered pan for about 10 minutes until tender. Stay there and stir gently frequently to prevent burning. For the sauce, heat the butter in a saucepan, add the flour and sauté for a few minutes. Deglaze with the milk and simmer for about 5 minutes. Season with salt, pepper and nutmeg and mix well with the vegetables. Serve with boiled potatoes and fresh bratwurst.
