Broccoli and Almond Soup

The perfect broccoli and almond soup recipe with a picture and simple step-by-step instructions.

  • 700 g Broccoli
  • 50 g Ground almonds
  • 500 ml Vegetable broth
  • 250 ml Plant milk
  • Pepper
  1. Spread the ground almonds on a baking sheet and roast in the oven at 180ºC for 10 minutes until golden brown.
  1. Steam the broccoli in a saucepan for 5-7 minutes or cook with a little water and the lid closed.
  1. Purée the broccoli, almonds (leave 2 tablespoons to sprinkle), stock and vegetable milk in a blender.
  1. Pour into a saucepan and heat briefly. Round off with pepper. Transfer to a plate and sprinkle with the remaining almonds.
