Broccoli and Almond Soup
The perfect broccoli and almond soup recipe with a picture and simple step-by-step instructions.
- 700 g Broccoli
- 50 g Ground almonds
- 500 ml Vegetable broth
- 250 ml Plant milk
- Pepper
- Spread the ground almonds on a baking sheet and roast in the oven at 180ºC for 10 minutes until golden brown.
- Steam the broccoli in a saucepan for 5-7 minutes or cook with a little water and the lid closed.
- Purée the broccoli, almonds (leave 2 tablespoons to sprinkle), stock and vegetable milk in a blender.
- Pour into a saucepan and heat briefly. Round off with pepper. Transfer to a plate and sprinkle with the remaining almonds.
