Broccoli and feta croquettes

Ingredients for 4 servings:

  • 500 g broccoli
  • 1 onion(s)
  • 2 slice(s) of bread or toast
  • salt and pepper
  • 1 tsp mustard
  • 1 tsp herbal vinegar
  • Paprika powder
  • 100 g feta cheese

Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

Wash, trim, and chop the broccoli, then boil in salted water for about 6 minutes. Finely dice the onion. Cut the bread into small cubes and soak briefly in water, then squeeze the excess water out well. Preheat oven to 210°C (top/bottom heat). Drain and refresh the broccoli, then chop it further if desired. Mix with the squeezed-out bread, onion, and spices. Stir in the mustard and vinegar, and season with salt and pepper. Crumble the feta cheese and fold in. The mixture should now have a good consistency, allowing you to form small balls or rolls with your hands. If the consistency is not yet as desired, add a little water or flour. Place the balls or rolls on a baking tray lined with baking paper and bake in the preheated oven for about 15 minutes.
