Broccoli cream soup in the home cooker

Ingredients for 4 servings:

  • 500 g broccoli, fresh
  • 1 large onion(s)
  • 40 g butter
  • 700 ml water
  • 30 g flour, to thicken
  • ½ tsp vegetable broth
  • 1 tsp salt
  • 1 pinch(s) of pepper
  • 1 pinch of nutmeg
  • 50 ml cream
  • 2 tbsp, heaped processed cheese or crème fraîche

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 1 hour 10 minutes; Total time approx. 1 hour 20 minutes

Preheat the home cooker (HC) to 250°C. Finely chop the onion, finely chop the broccoli, and sauté everything in butter for about 10 minutes. Then set the HC to 110°C and add all ingredients, except the cream and processed cheese, to the HC and simmer for 45 minutes. When the time is up, add the processed cheese and cream and simmer for another 15 minutes. Finally, puree the soup with an immersion blender until creamy.
