Broccoli rice with cheese topping

Ingredients for 3 servings:

  • 100 g rice
  • 750 g broccoli
  • 1 onion(s)
  • 1 clove(s) garlic
  • 1 tbsp butter
  • 50 g almond(s), chopped
  • salt and pepper
  • 4 eggs, including the yolk
  • 125 ml milk
  • 100 g cheese, grated
  • 4 eggs, including the egg whites, beaten to stiff peaks
  • nutmeg

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Soak 100g of rice in salted water for 20 minutes. Divide the broccoli into florets and cook in salted water for 5-10 minutes, then drain. Sauté the diced onion and garlic in hot butter until translucent. Add the almonds, vegetables, and rice, and season with salt, pepper, and nutmeg. Transfer everything to a greased baking dish. Whisk 4 egg yolks with 125ml milk. Stir in 100g of grated cheese and fold in 4 beaten egg whites, then spread over the broccoli. Bake at 220°C (425°F) or 180°C (350°F) for approximately 20 to 25 minutes.
