Ingredients for 4 servings:

  • 500 g broccoli
  • 2 large potatoes
  • 1 liter vegetable broth
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Cut the potatoes into small pieces. Simmer the broccoli and potato pieces in the broth for about 20 minutes, until both are tender. Purée with a hand blender or place everything in a blender. Return to the pot and heat through again. Season with salt and pepper. Tip: For a more refined texture, stir in another 100 ml of cream; this will make the soup slightly richer.
