Ingredients for 4 servings:
- 3 m.-sized onion(s), cut into small pieces
- 1 thin leek(s), in rings
- 1 large broccoli, cut into florets
- 1 liter vegetable broth
- ½ bottle of Cremefine
- some salt and pepper, from the mill
- Nutmeg, freshly grated
- Parsley or basil
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
Suitable for WW, low in fat yet creamy
Sauté the onions and leeks in a little olive oil, then pour in the broth. Add the broccoli florets and simmer the soup for 20 minutes. Then puree and season with salt, pepper, and nutmeg. Finally, add the cream substitute. If desired, garnish with freshly chopped basil or parsley.
