Brunch – Turkey baked with tomatoes

Ingredients for 4 servings:

  • 500 g turkey breast fillet(s)
  • 2 tomatoes
  • 2 cups of cream cheese, natural, e.g. brunch
  • 1 bunch of mixed herbs, e.g. thyme, oregano, basil, chives
  • 1 small onion(s)
  • 1 ½ bell peppers
  • 3 tbsp crème fraîche
  • salt and pepper
  • Paprika powder
  • possibly grated cheese
  • 2 tbsp oil

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Slice the turkey and sear on both sides. Place the meat in a shallow baking dish. Wash and slice the tomatoes, place them on top of the seared meat, and sprinkle with salt and pepper. Place the cream cheese in a bowl. Dice half a bell pepper, chop the herbs, and fold both into the mixture. Season with salt, pepper, and paprika. If desired, dice the remaining tomato slices and stir them into the mixture. Spread the brunch cream about 1 cm thick over the meat and tomatoes. Grate the cheese on top, if desired. Place the dish in the oven at 180°C (convection oven) for 25 to 30 minutes. For the sauce, finely dice the onion and a bell pepper and sear in a little oil. Add the remaining brunch mixture and thin with a little milk. Season to taste. Serve with rice or baguette.
