Ingredients for 4 servings:
- 2 large chicken breast fillets
- 150 ml balsamic vinegar, good
- 150 g tomatoes
- 1 handful of basil, chopped
- 2 tbsp olive oil
- salt and pepper
- arugula
- 4 ciabatta rolls
Instructions
Working time approx. 40 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 20 minutes
Halve the chicken breast fillets lengthwise into two thin fillets. Pour the balsamic vinegar into a bowl and marinate the fillets for 30 minutes to 8 hours. Chop the tomatoes into small pieces and toss them in a bowl with the olive oil and basil. Season with salt and pepper. Heat the olive oil in a pan. Drain the chicken breast fillets and fry until crispy on the outside and tender on the inside. Season with salt and pepper. Top the ciabatta rolls with a layer of arugula, then the balsamic chicken, and finally the tomatoes.
