Ingredients for 8 servings:

  • 2 ciabatta
  • 8 tomatoes (vine tomatoes)
  • 1 onion(s)
  • 4 garlic cloves
  • 1 bunch of basil
  • 1 tbsp Aceto balsamico, white
  • 1 dashes lime juice
  • Salt
  • Black pepper, freshly ground
  • 1 pinch(s) of sugar
  • e.g. olive oil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

with balsamic vinegar and lime

Preheat oven to 200°C. Cut the tomatoes into small pieces. Finely dice the onion. Finely chop three garlic cloves. Mix everything in a bowl, season with salt and pepper. Peel and halve the other garlic clove. Cut the ciabatta into thin slices, drizzle one side with a little olive oil, and rub with the garlic halves. Bake the bread in the oven for a maximum of 6-8 minutes until crispy. In the meantime, mix the tomatoes, onion, and garlic and season with balsamic vinegar, lime juice, and a small pinch of sugar. Add four tablespoons of olive oil, stir well, and let stand for two minutes. Stir again, then drain off any excess liquid. Cut the basil into thin strips, add, and mix everything together. Remove the ciabatta from the oven, sprinkle a little salt on the olive oil side, and top with the tomato spread. Finally, season with salt and pepper and serve on a warmed plate. Drizzle a few drops of olive oil over the bread and garnish with basil leaves.
