Brussels sprout puree with goat's cheese

Ingredients for 4 servings:

  • 500 g Brussels sprouts, fresh
  • 1 tbsp, heaped goat’s cheese (Chavroux)
  • 1 tbsp, heaped crème fraîche
  • some cream
  • nutmeg
  • some chili flakes
  • Salt
  • 1 pinch(s) of sugar

very fine and quick to make

Cook the Brussels sprouts in a little salted water until tender; this takes about 10 minutes. Drain the Brussels sprouts and add the cream cheese, crème fraîche, chili flakes, and nutmeg, and transfer everything to a tall jug. Blend everything thoroughly with a hand blender, adding enough cream to create a very smooth cream. Season the cream with a pinch of sugar. This vegetable is delicious with bratwurst and meatballs, as well as with all kinds of roast dishes.
