Brussels sprout salad

Ingredients for 4 servings:

  • 500 g Brussels sprouts
  • 100 g olives, black
  • 10 cherry tomatoes
  • 150 g feta cheese
  • 20 g sunflower seeds
  • 6 tbsp olive oil
  • 4 tbsp vinegar
  • 1 pinch(s) of oregano
  • Salt

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Clean the Brussels sprouts, halve them, and blanch them in boiling salted water for about 5 minutes. Rinse with cold water and drain. Halve the tomatoes and dice the feta cheese. Combine the Brussels sprouts, tomatoes, olives, and feta cheese in a bowl and mix. Mix together a marinade of salt, pepper, oregano, vinegar, and oil and stir it into the salad. Finally, briefly roast the sunflower seeds without fat and sprinkle over the salad.
