Ingredients for 5 servings:
- 250 g low-fat curd cheese
- 125 g cheese, grated, light
- 1 tsp pizza seasoning
- 1 tsp pepper
- 3 eggs
- 4 tbsp low-fat yogurt
- 3 tbsp tomato paste
- 1 tbsp lemon juice
- 1 tbsp mustard
- 1 tsp honey, liquid
- 200 g minced beef
- 4 leaves of iceberg lettuce
- 5 cherry tomatoes
- 3 gherkins
- 1 onion(s)
- 4 slices of processed cheese, light
- salt and pepper

Preheat the oven to 180°C (top/bottom heat) or 160°C (fan). For the dough, thoroughly mix the eggs, low-fat quark, and grated cheese in a bowl or in a mixer. Add the pizza seasoning and pepper to the dough and mix well again. Line a baking sheet with baking paper and spread the dough evenly. Bake in the oven for 20 minutes and let cool on the baking paper. Meanwhile, for the sauce, mix the yogurt, tomato paste, lemon juice, mustard, and runny honey in a bowl. Wash the tomatoes and lettuce leaves. Peel the onion and slice into thin strips. Chop the tomatoes and gherkins. Heat a non-stick pan until well-heated and fry the minced meat, seasoning well with salt and pepper. Spread the sauce over the cooled dough. Spread the minced meat over 2/3 of the dough to make it easier to roll up. Spread the melted cheese over the minced meat, then top with the lettuce leaves, tomatoes, onions, and gherkins. Now roll up the wrap. This works best if the dough is gradually removed from the baking paper while rolling. Cut into portions and serve.
