Burrata with nectarines and basil oil

Ingredients for 2 servings:

  • 1 Burrata, approx. 250 g or 2 of 125 g each
  • 3 nectarines
  • 1 handful of basil
  • 4 tbsp first pressing olive oil
  • 1 tsp lemon zest
  • salt and pepper
  • Sugar

Instructions

Working time approx. 20 minutes; Rest time approx. 5 minutes; Total time approx. 25 minutes

Place the nectarines in boiling water for 2 minutes, then rinse with cold water. Halve and stone the fruit, then quarter and peel. Halve the quarters again if necessary. Set aside the fruit. Finely chop the basil, mix with the oil and lemon zest, and let it steep for 5 minutes. Then season the oil with salt, pepper, and sugar. Cut the burrata open and place it in the center of two plates. Arrange the nectarine slices around the burrata and drizzle with the basil oil.
