Ingredients for 1 servings:
- 125 g butter
- 125 g soft dates, pitted
- ¼ lemon(s), untreated, zest of which
- 1 egg(s)
- 250 g flour
- some flour for the work surface
Instructions
Working time approx. 20 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 30 minutes
with the sweetness of dates, suitable for Baby Led Weaning (BLW)
Finely chop or puree the butter, dates, and lemon zest in a food processor fitted with a chopping blade. Then add the egg and continue blending for a few minutes. Now add the flour a little at a time (e.g. a few tablespoons at a time), stirring or kneading the mixture thoroughly with the food processor in between. Place the dough in a freezer bag and press down to flatten and smooth. Then let the dough rest in the refrigerator for at least 1 hour. Roll out the chilled dough on a floured surface until it is about 3 mm thick and adjust as desired. In the meantime, preheat the oven to 200°C (top/bottom heat). Place the shaped dough on baking sheets lined with baking paper and bake for about 10 minutes.
