Buttermilk – Aniseed – Rolls
The perfect buttermilk – aniseed – rolls recipe with a picture and simple step-by-step instructions.
- 250 g Wheat flour
- 250 g Spelled flour
- 1 Pkg Baking powder
- 5 El Neutral oil
- 200 ml Lukewarm buttermilk
- 80 ml Warm water
- 0,5 cube Fresh yeast
- 1 Tl Sugar
- 3 Tl Ground anise
- 1 Tl Salt
- For painting:
- 1 Egg yolk
- 3 El Milk
- Before you start, please leave the oven on for 10 minutes. Preheat to 50 degrees with top / bottom heat, then switch off and do not open the oven door !!!
- Mix the yeast with the buttermilk and water.
- Put the remaining ingredients in a bowl and add the yeast milk mixture to the center.
- It is best to knead with the food processor until the dough forms into a ball, this takes about 4-5 minutes.
- Then cover the bowl with a kitchen towel and place it in the preheated oven on the lowest rail. The dough doubles in no time. After 20-30 minutes you can take it out.
- Preheat the oven to 200 ° C top / bottom heat, place a flat bowl with water on the bottom (fire-proof !!!).
- Line a baking sheet with parchment paper and use the dough to form roll blanks and place them on top. Mix the egg yolk with milk and brush on the blanks, cut into a circle at the top if desired.
- Then on the middle rail in the oven for about 20-25 minutes. Bake until golden brown.
