Spelled Buttermilk Rolls No Knead

- 480 g Buttermilk
- 600 g Spelled flour type 1050
- 100 g Wholemeal spelled flour
- 6 g Yeast fresh
- 15 g Salt
- 15 g Apple Cider Vinegar
- 10 gr Cane sugar
- Empty a cup of buttermilk (approx. 480 gr.) Into a bowl and stir the yeast and sugar in it. Add the flour, salt and vinegar. Mix with a mixing spoon and then knead by hand until the dough is smooth. Cover up.
- Let rise for two hours in the warm, stretching and folding again thoroughly every half an hour with very wet hands. Then let the dough rest in the warm for 2 hours. (I haven’t tried it yet, but I’m sure that it will work overnight in the refrigerator for about 8-10 hours).
- Form rolls with very wet hands and place them on a baking sheet lined with baking paper. While the oven is preheating (225 ° C, top / bottom heating), let it relax for another 30 minutes. Cut in and put in the oven. Bake for 10 minutes with plenty of steam. Then open the oven door and let off the steam. Reduce the heat to 210 ° C and bake for another 20 – 25 minutes, depending on the degree of browning required. Take out of the oven and spray or brush with water while it is still hot.
