Buttermilk cake with fruit

Ingredients for 1 servings:

  • 500 ml buttermilk
  • 400 g flour
  • 200 g sugar
  • 1 packet of baking powder
  • 2 can/n mandarin oranges or peaches or cherries
  • 100 g desiccated coconut
  • 50 g sugar
  • 4 eggs
  • Grease for the tray

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Make a batter with buttermilk, eggs, 200g sugar, flour, and baking powder. Grease a baking sheet and spread the batter on it. Drain the mandarins and mix the sugar with the desiccated coconut. Spread the fruit on the batter and sprinkle the coconut-sugar mixture over it. Bake at 180°C (350°F) for about 20 to 25 minutes. This cake also tastes delicious with cherries or peaches.
