Buttermilk cake with mandarins

Ingredients for 1 servings:

  • 3 eggs
  • ½ cup(s) sugar
  • 4 cups flour
  • 2 cups buttermilk
  • 1 packet of vanilla sugar
  • 1 packet of baking powder
  • 2 cans of tangerine(s)
  • 2 cups desiccated coconut
  • 1 cup of cream
  • 100 g butter

Instructions

Working time approx. 20 minutes; Rest period approx. 1 day; Total time approx. 1 day 20 minutes

Cups = coffee cups (small ones, not pots) Baking time: 20 min. / 200°C (preheated) It’s best to have all the ingredients ready and then quickly mix the batter together (first fold in the eggs, then the sugar, flour, vanilla sugar, baking powder, buttermilk, and mandarin oranges). Mix well so the batter rises nicely. Spread the batter on the baking sheet, sprinkle on the coconut flakes, and bake. Bring the butter and cream to a boil and pour over the cake immediately after baking. If possible, make the cake a day in advance so it can set properly.
