Buttermilk mousse

Ingredients for 4 servings:

  • 1 liter buttermilk
  • 20 g gelatin
  • 4 cl lime juice
  • 250 g powdered sugar
  • Cream (to taste)

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes

Pour the buttermilk into a bowl. Weigh out the gelatin (20g) and dissolve it in the cold water. Strain the powdered sugar through a fine sieve and stir it into the buttermilk. Measure out 4cl of lime juice and add it. Mix everything together first! Now squeeze out the gelatin and let it dissolve. Add some of the buttermilk to the liquid gelatin and stir. Now add the stirred mixture to the stirred buttermilk. Mix everything thoroughly again and add the whipped cream (until the mixture is nice and creamy). Transfer everything to a bowl and chill for about 2 hours. I recommend serving it with red fruit jelly or fresh fruit!
