Buttermilk pudding with mango sauce

Ingredients for 4 servings:

  • 200 ml cream
  • 200 g sugar
  • 10 g gelatin
  • Water
  • 1 vanilla pod(s)
  • 500 ml buttermilk
  • 1 mango(s)
  • 1 tbsp powdered sugar

Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes

Mix about half of the cream with the sugar and bring to a boil. Remove from the heat and stir in the gelatin that has swollen in the water. Transfer to a bowl and stir in the buttermilk and scraped vanilla seeds. Chill for 20 minutes, stirring occasionally. Whip the remaining cream and fold into the buttermilk cream. Pour the mixture into four oiled bowls, cover with plastic wrap, and chill for at least two hours. For the sauce, puree the mangoes and sweeten with powdered sugar, if desired. Turn the puddings out and serve with the sauce.
