Ingredients for 24 servings:

  • 2 eggs
  • 2 cups sugar
  • 2 cups buttermilk
  • 4 cups flour
  • 1 baking powder
  • 2 cups desiccated coconut
  • 1 cup(s) sugar
  • 200 g butter, liquid
  • 1 cup of cream

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Whisk together eggs, sugar, buttermilk, flour, and baking powder. Pour the relatively runny batter onto a baking sheet lined with baking paper and spread evenly. Mix the desiccated coconut and sugar and sprinkle over the batter. Bake at 180°C for approximately 20 minutes. While baking, gently warm the butter and cream and spread over the finished cake.
