Ingredients for 6 servings:
- 1 white cabbage, roughly chopped
- 1 large onion(s), diced
- 1 large leek, cut into fine rings
- 4 carrots, sliced
- 1 handful of peas, fresh
- 200 g beans, fresh, cut into 5-7 cm long pieces
- 3 pieces of bratwurst, uncooked
- vegetable broth
- ½ bunch parsley
- 4 large potatoes, cut into small cubes
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Sauté the white cabbage and onion in a large pot until tender. Deglaze with vegetable stock, bring to a boil, and add the remaining ingredients, except for the sausage, one at a time. When the vegetables are almost cooked, make the sausage dumplings. To make them, open the uncooked sausages at the ends, hold them in moistened hands, and twist out small dumplings. These can be dropped directly into the soup. These need to simmer for a few moments, and then the soup is ready.
