Ingredients for 4 servings:
- 1.2 kg chicken drumstick(s)
- 1 kg sweet potatoes
- 3 tbsp olive oil
- salt and pepper
- 1 tsp chili powder
- 1 tsp smoked paprika powder
- 1 tsp sweet paprika powder
- 1 ½ tsp cumin powder
- ½ tsp cayenne pepper
- 1 ½ tsp thyme, dried
- 1 tsp marjoram, dried
- 1 ½ tsp oregano, dried
- 1 ½ tsp coriander seeds, dried
- 1 tsp black peppercorns
- 1 tsp brown sugar
- 8 sprigs of thyme
- 30 g butter, cold, in flakes
- 2 limes, juice

Peel the sweet potatoes and cut into approximately 1 cm wide pieces. Toss them in a bowl with olive oil and season with salt and pepper. Finely crush the dried spices with 1.5 teaspoons of salt in a mortar and pestle. Mix them with the chicken drumsticks in a bowl. Spread the sweet potatoes on a baking sheet and bake in a preheated oven on the middle rack at 200 degrees Celsius (convection not recommended) for 40 minutes. After 10 minutes, add the chicken drumsticks and thyme sprigs to the sweet potatoes. Distribute the butter flakes over the drumsticks and finish cooking. If you’re using regular chicken drumsticks (split at the joint instead of drumsticks), cook everything together for a total of 40 minutes. Finally, drizzle the drumsticks with lime juice and serve.
