Crispy potato and chicken croquettes

Ingredients for 6 servings:

  • 6 chicken drumsticks
  • 4 medium-sized potatoes, floury
  • ½ tsp thyme
  • 1 tsp sweet paprika powder
  • ½ tsp chili flakes
  • 2 eggs
  • some flour
  • some breadcrumbs
  • salt and pepper
  • some oil

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes

delicious finger food with a “bone grip” to grab

Boil the chicken drumsticks in salted water for about 20 minutes, until the meat is tender. Then remove the meat and cut into small pieces. Be sure to save the bones. Boil the potatoes until tender, drain, let them steam off, and mash them while warm. Then mix the meat and spices with the potatoes and season well to taste. Now press some of the mixture into the palm of your hand, partially place a chicken bone in it, and shape the mixture into a ball around it. Repeat with the rest of the mixture. Then coat the meat like a schnitzel, first in flour, then in beaten egg, and finally in breadcrumbs, and fry in oil at medium heat. This will make it crispy on the outside and creamy on the inside.
