Mayonnaise will make the cake juicy
It may sound a little crazy, but some actually bake cakes with mayonnaise.
- The mayo should ensure that the cake is particularly moist.
- It is often used as an oil substitute.
- The most amazing thing is that you shouldn’t be able to taste the mayonnaise in the finished cake.
- Granted, this isn’t a cake recipe for calorie counters. It’s still worth a try.
Basic recipe: This is how the mayo cake succeeds
You can make the cake with mayonnaise in many different ways. We present you with a particularly easy recipe that doesn’t even require you to weigh anything:
- Pour the contents of two small mayo jars (125 grams each) into a bowl.
- Add flour and sugar, 2 cups each.
- This is followed by two teaspoons of baking powder, a packet of vanilla sugar, and a pinch of salt.
- Squeeze a lemon and pour the juice into the bowl.
- Add four more eggs to the bowl and mix to form a smooth batter.
- Grease a Bundt cake mold and pour in the batter. The mayonnaise cake is baked at around 180 degrees for around 40 to 45 minutes.
- You can refine the cake as you wish, for example with powdered sugar. You can also add a few raisins when baking to make the cake even juicier.
Variant: chocolate cake with mayonnaise
You can refine the mayonnaise cake as you like. A chocolate variant that comes from the USA is particularly popular:
- Boil 240 milliliters of water with six tablespoons of cocoa and let the mixture cool.
- Then add 150 grams of mayonnaise, stirring constantly.
- When everything has mixed well, you can add 140 grams of flour, 60 grams of starch, and 200 grams of sugar and mix in.
- Finally, two teaspoons of baking soda and a pinch of salt followed.
- The dough is then poured into a springform pan.
- This mayonnaise cake is also baked in a preheated oven at 180 degrees, but it only takes about half an hour.
- If desired, you can refine the cake further. For example with a chocolate glaze.
- Tip: Try adding chopped chocolate to the batter. This makes the cake even chocolatier.
